JKS restaurant group Hoppers is planning to open its third site in London's King's Cross as it looks to "grow with carefully considered sites"
The site in the Universal Music building in Pancras Square will include seating over ground and mezzanine levels, as well as a small bar area.
Karan Gokani, director of the Sri Lankan-inspired group and husband of JKS Restaurants co-founder Sue Sethi, told The Caterer: "Hoppers took off and was far more successful than we ever imagined. We are looking to grow with carefully selected sites.
"We're holding back from growing too fast, but I think a lot about where the brand should be.
"There are a few more areas in London that we could do, but it will never be in Mayfair or in a neighbourhood as it needs the footfall of walk-in crowds.
"Guests come for the buzz, to share tables and rub shoulders with other guests. You can create ambience, but you can't create buzz."
The first Hoppers site opened on Frith Street, Soho in October 2015, with the second following on St Christopher's Place, Marylebone in September 2017.
JKS Restaurants is also planning to open a Bao site in the same building, which would be the fourth site for the concept joining Fitzrovia, Soho and Borough Market.
Hoppers will feature in a Menuwatch in The Caterer later this month.
