Rob and Donna Taylor will open a new restaurant next month, following the closure of their acclaimed Kent pub the Compasses.

The couple will open Tallow in Tunbridge Wells, Kent, on 5 November offering an a la carte menu in the 26-cover restaurant as well as a tasting menu in an upstairs 10-cover private dining room.

Chef Rob told The Caterer: "We are actually down-sizing which will hopefully give us more control over what we are doing with a smaller team – we just want it to be a nice neighbourhood restaurant."

The Taylors closed their Bib Gourmand-holding pub in Crundale in September after eight years at the helm. Guardian restaurant critic Grace Dent described the team as having "weaved magic" when she visited in its final weeks pledging "wherever this team goes, I will follow".
