From the Highlands to the south coast, new establishments are popping up across the country every week. New hotels, restaurants and bars launch into the world headed up by familiar faces and industry newbies alike. Here are the latest openings from this month.

The New Inn, Tresco, Isles of Scilly
The New Inn hotel and restaurant on the family-owned island of Tresco on the Isles of Scilly has reopened following a major refurbishment.
The development, which began in December last year, has seen all 16 bedrooms redesigned with wooden bedframes, bespoke blinds, new bathrooms and USB chargers.
The Driftwood Bar has been repainted and the Pavilion restaurant now has reclaimed wooden tables, a log burner, and walls decorated with items from Tresco's history.
Outside, a new terrace and Ox Grill has opened where dishes will be cooked over coals in the summer. Head chef Liam Caves has created a menu with pub favourites such as the New Inn Burger, fish and chips and half lobster with local chilli and herb butter. Fish dishes depend on the local catch by islanders Jordan Penhaligon and Hannah Keith, who also work at Tresco's heliport and cottage department respectively.
The new look has been created by interior designer Tania Streeter, who is also leading the upgrade of the 100 holiday cottages on Tresco over the next five years.

Madhu's Brasserie, Richmond, London
Indian restaurant group and caterer Madhu's has launched a site in London's Richmond, serving a modern take on Indian cuisine. Customers can sit at a counter overlooking the tandoor oven and robata grill.

Audreys, Flat Iron Square, London
The team behind London's Flat Iron Square and Goods Way are to open an all-day café bar in Bankside. It will serve seasonal dishes from an open kitchen, with takeaways on offer.

Le Pont de la Tour Bistrot
The former bar space next door to riverside restaurant Le Pont de la Tour in London is being relaunched as a bistro and brasserie. Executive chef Tony Fleming has created a menu inspired by regional French classics.

Wine specialist 28°-50° is to open a workshop and kitchen in the former Côte Brasserie site near London's Oxford Circus. It will seat 120 covers and serve wines by the carafe, glass and bottle, paired with the à la carte menu.

The Lowback
Hawksmoor group's first new bar in 11 years is now fully open within its restaurant situated on a floating barge in Canary Wharf. It serves a range of drinks such as the ‘ultimate gin Martini', Champagne cocktails, and popular dishes from the group's New York restaurant.

The Mess, Wiltshire
The Messums Wiltshire gallery and arts centre in the Nadder Valley is to launch its own restaurant and delicatessen this Easter.
The Mess will be housed in a former dairy building and run by a female-led kitchen team. Chef Ana Ortiz plans to bring South American flavours to the menu, while Lydia Gibson will create cakes and pastries. The pair previously worked together at the Newt hotel in Somerset.
Open from Thursdays to Saturdays, the Mess will seat 25 covers in the restaurant and an additional 60 in the outdoor extension, which will host numerous live music events throughout the summer.
The restaurant will serve an all-day menu with a wine list available throughout. Freshly squeezed orange juice will be served in the morning, and cocktails and local beers to accompany sharing boards in the evenings.

This cafe and fitness studio in south west London serves a health-focused menu designed to promote nutrition and wellbeing. It is led by Le Cordon Bleu graduate Vidushi Binani, alongside her co-founder Haylene Ryan.

Big Table Group's Amalfi Ristorante offers an Italian dining experience across two floors. The venue features mosaic marble flooring, terracotta tiles and an Amalfi coast-inspired garden room. The restaurant seats 152 indoors and 20 on the outdoor terrace.

Flat Iron, Southwark, London
The cult London steak restaurant will open its 10th site to celebrate a decade in business. The new branch will resemble a traditional butcher's shop thanks to a collaboration with Michealis Boyd & Applied Studio.

Decimiño, London
The Decimiño taco truck has landed on the 11th floor of the Standard, London hotel. Branded as the ‘baby sister' of the hotel's restaurant, Decimo, it serves a selection of Spanish-Mexican dishes with an open-air bar.

Walmer Castle, London
This Notting Hill pub is reopening as a Scottish restaurant and whisky bar in collaboration with the Cragellachie hotel in Speyside. The venue will span two floors with a ground floor dining room and bar serving modern Highland cuisine, a cosy mezzanine available for private hire, and a first floor Spey Bar offering over 400 whiskies.
The design has been curated by Sophie Vanacore and incorporates Speyside cask wood and fallen branches, Orkney chairs and dining tables by Scottish carpenters made using recycled cask timber.The Cragellachie's executive head chef William Halsall, former head chef at Le Caprice in London, has created a menu celebrating Scottish ingredients. Dishes will include Highland smoked salmon; Grants of Speyside Haggis Bon Bons; and Kellas Estate venison carpaccio.
Additional signature dishes will include Speyside 100% Scotch Assured steaks; local lobster truffled mac and cheese; and Highland wagyu beef sliders. The dessert menu will feature Scottish cheeses and the traditional Cranachan pudding.Whiskies will be available by the glass or in cocktails and customers can secure a personal cask to be stored in Walmer Castle's cellar to be enjoyed on each visit.

Young's has launched a flagship pub in Wandsworth, the area the brewery was first founded in 1831. The Spread Eagle features 21 boutique bedrooms and the group's head office and training kitchen are located behind the site.

Acme Fire Cult, Dalston, London
The team behind Acme Fire Cult have launched their first permanent restaurant at 40FT Brewery in London's Dalston.
Created by former St Leonards chefs Andrew Clarke and Daniel Watkins, it focuses on live fire cooking with vegetables taking centre stage. The pair have been serving flatbreads at the brewery for some time but are now offering a wider menu.
The restaurant is opposite the tap room and uses beer byproducts, such as yeast and spent grain, to make ferments such as an Acme ‘Marmite', and an Ancho hot sauce with beer-soaked chillies.
There's space for 50 guests indoors and 60 outside on a covered and heated terrace, which is also home to a large grill and smoker that will be running in all weather.
Some dishes are influenced by the brewery, such as beetroot with a sweet and sour dill dressing, beetroot purée, pickled blueberries and sorrel, which is cooked in the ‘first runnings' of 40FT Brewery Sunset Hazy IPA. The restaurant is open Wednesday to Sunday.
