Jackson Boxer named chef consultant of Cowley Manor Experimental
Jackson Boxer, chef patron of Brunswick House and Orasay, has been appointed chef consultant of Cowley Manor Experimental in the Cotswolds, which is due to reopen this summer.
The 17th-century property is Experimental Group's first UK project outside of London and is set to include 36 rooms, a garden room, bar and lounge, a 50-cover restaurant, a 50-cover outdoor terrace, a library, spa and two swimming pools.
Rooms will be furnished with four-poster beds, rattan furniture and graphic fabrics.
Boxer will oversee the food offering across the entire property, which includes the main restaurant, spa, room service and Experimental Cocktail Club Cotswolds.
His menu will focus on local produce with a French twist, with bar dishes such as grilled brioche sandwich of Gloucestershire ham, Double Gloucester cheese and Wiltshire truffles; caviar with Cowley cream and toasted waffles; and Stinking Bishop gougères.
The selection of dishes at the restaurant will feature ingredients from the hotel's herb and salad garden, which is being developed by Boxer. Example dishes include Evesham asparagus with courgette and cucumber; oysters and elderflower Champagne; and Cornish lobster tagliolini.

We knew from our early days dining together as a group around a big table at Brunswick House that we wanted to work alongside him. We can't wait to see what he will do in the kitchen at Cowley."

The Experimental Group was founded in 2007 by Olivier Bon, Pierre-Charles Cros and Romée de Goriainoff and operates several international venues, including in Paris, London, Venice, New York and Ibiza.
