Lyon's restaurant founder to open Hackney wine bar and brasserie

The founder of London restaurant Lyon's Seafood & Wine Bar is opening a new site in Hackney in early July.

Anthony Lyon (pictured left), a former general manager at Hix Soho and the Wolseley, has teamed up with sommelier Kelvin McCabe (right) to launch the Hackney Coterie brasserie and wine bar.

The venue will be split across two floors and also feature a wine shop and deli, with a large outdoor terrace and downstairs event space.

Head chef will be Dominic Auger, who joins from Hide in Mayfair, where he cooked alongside Ollie Dabbous.

The menu will be seasonal with a focus on minimising waste, featuring dishes such as cured pork belly, kisaichi pickled watermelon and smoked tofu; and burnt apple filo tart, hazelnut and koi crumbed and tonic bean ice-cream.

On weekends the facade of the building will retract and a brunch menu will be served, including English muffin with sausage patty, black pudding crumb, spinach, poached egg and salted egg yolk hollandaise.

McCabe has more than 20 years' experience in the industry and worked as head sommelier at Zuma and Roka and was wine buyer and beverage director at the Adam Handling Group. Under his direction Hackney Coterie's bar, brasserie and shop will focus on lesser-known drinks producers offered at an accessible price point.

Lyon opened Lyon's Seafood & Wine Bar in Crouch End in 2019.
