Claude Bosi to oversee restaurant at the Peninsula London hotel
Claude Bosi has been appointed chef director of Brooklands restaurant at the Peninsula London hotel, which is due to open in early 2023.
Brooklands will be a rooftop restaurant offering seasonal, contemporary European cuisine sourced from the British Isles and beyond, alongside a selection of cigars curated by Manu Harit.
Architect Archer Humphreys has designed the restaurant to pay homage to the classic era of British aviation and motorsport. It will see the main dining room decorated with an overhead scale model of the Concorde aircraft.
The automotive-themed bar will also display a rotating collection of race cars from the Brooklands racetrack and museum in Surrey.
As well as Brooklands, the 190-bedroom hotel in London's Hyde Park Corner will be home to chef Dicky To's Chinese restaurant Canton Blue, and the Lobby restaurant, which will offer the Peninsula Afternoon Tea.
Bosi is also behind the two-Michelin-starred Claude Bosi at Bibendum restaurant in London and is due to open Mediterranean restaurant Socca with Jamavar founder Samyukta Nair in London's Mayfair this year.
The Peninsula Hotel portfolio, which operates across London, Tokyo, Beijin and Paris, is owned by the Hongkong and Shanghai Hotels.
