Behzad Gotla appointed head chef of D&D London's Butlers Wharf Chop House
Behzad Gotla has been appointed head chef of D&D London's Butlers Wharf Chop House.
Gotla joins the London Bridge restaurant following eight years with the Gordon Ramsay Group, most recently as head chef of its Maze Grill restaurants.
He said: "I'm delighted to have joined the Butlers Wharf Chop House team. I want the restaurant to be a place where people come to share the best – and biggest! – meat cuts in the city. I'm also really proud that our meat is all British. It's crucial to me that diners can trace their meat right back to the field that it came from."
Gotla's menu will include classic chop house dishes, such as steak and ale pudding and chicken and mushroom pie, refined with a modern twist. Other dishes will include devilled Suffolk chicken livers with girolles and potato sourdough. The Cut Above menu will feature prime cuts weighing more than 1kg each and will showcase a different breed of British cattle each week.
Gotla has put reducing food waste at the heart of the menu, with any trimmed meat going to the Chop House cheeseburger. Bones will be used to create a bone marrow, shallot and red wine gravy, and fat will be used to fry the triple-cooked chips.
