Tom Aikens to open restaurant at Langham Jakarta
Chef Tom Aikens is to open a restaurant called Tom's on the 62nd floor of the newest Langham hotel in Jakarta, scheduled to open in September.
The European restaurant will have an open kitchen, Himalayan salt meat lockers and a wood-fired grill, and will offer à la carte menus with a focus on meat, burrata and desserts, as well as Champagnes and cocktails.
A trolley will be stocked with Pugliese burrata, roast beef will be carved at the table on weekends and seasonal seafood towers will be a focal point on the dining table. Tom's will also have a mezzanine lounge with a circular steel stairs connected to a wood-panelled whisky bar.
The restaurant will have Italian mosaic flooring by Sicis, Knoll chairs, leather upholstered benches, chandeliers and floor to ceiling windows overlooking Jakarta's skyline from the Sudirman Central Business District.
The 223-bedroom hotel will also have a rooftop eco-garden to grow herbs for the restaurant, which will be overseen by executive sous chef Giles Langford. Langford initially studied agriculture and horticulture and was trained by Aikens at his eponymous Chelsea restaurant. He went on to hold roles as head chef at Grosvenor House Dubai and at the first Coppa Club in Sonning at the Great House.
Aikens also runs the Michelin-starred Muse in London's Belgravia and three outlets at the Edition hotel in Abu Dhabi.
He said: "At Tom's, the produce is the hero. We are celebrating flavours and harmonising taste and texture, working with the world's best meat, imported or dry-aged to perfection in-house, along with poultry and seasonal seafood prepared and cooked ‘on the bone', which is a superior method of cooking."
