The Salt Room seafood restaurant in Brighton, East Sussex, has appointed Lawrence McCarthy as its new head chef.

He joins from Michelin-starred Tristan's in Horsham, West Sussex. He had previously worked at Tom Aikens restaurant in Chelsea in 2010, two-Michelin-starred Marcus Wareing at the Berkeley and two-Michelin-starred Restaurant Steinheuers in Germany.

McCarthy said: "Cooking for me is all about simplicity. The simple pleasure of eating well-sourced and quality ingredients is what the Salt Room is all about and I am really excited to be leading this kitchen!"

From 20 February he will debut his new lunch and dinner menus including dishes such as spicy samphire bhajis with brown crab mayo as well as scorched raw mullet.

The Salt Room opened in 2015 and in 2017 was named Seafood Restaurant of the Year by The Caterer.
