Will Hemming departs Monkey Island for Oakley Court
Will Hemming has left his role of executive chef at Monkey Island in Bray, Berkshire for the head chef role at the Oakley Court in Windsor.
The independent four-silver-AA-starred, 118-bedroom Oakley Court has appointed Hemming to take over its food offerings, replacing Coalin Finn. Its two-AA-rosette restaurant the Dining Room has 85 covers and further 86 outside on the riverside terrace.
Welsh-born Hemming also previously worked as head chef of Simpson's in the Strand as well as executive sous chef at the Sky Garden in London. He joined YTL Hotels' Monkey Island hotel last year ahead of the opening in spring 2019. Monkey Island Estate is in the process of appointing a new head chef.
Hemming said: "I am thrilled to be joining the Oakley Court team and featuring British and European farmhouse style food on the menus here. The hotel has such a wonderful setting with the backdrop being the River Thames, I am excited to take the dining experiences to another level."
The Oakley Court has been a luxury hotel since 1981 and has been the setting of more than 200 films since the 1950s.
The hotel won both the Hotel Catey Sustainable Hotel of the Year award and Sustainable Business Award at the Cateys in 2017.
