Former Darby's executive chef Dean Parker to open Celentano's in Glasgow
Dean Parker, former executive chef of Robin Gill's Darby's in London, is to open his first restaurant with wife Anna in Glasgow, called Celentano's.
The restaurant is set to open in August and will be located within the city's Cathedral House building. The venue will serve "wholesome Italian fare" alongside wines and cocktails, with a "largely sustainable", low-waste kitchen.
Glasgow native Anna will head up front of house and operations, while Dean will be at the helm in the kitchen. As well as Darby's, Dean also previously worked at several of Gill's other London restaurants, including the Dairy in Clapham as head chef.
The menu at Celentano's will comprise snacks, small plates, pasta, large plates and desserts, all designed to be shared. Snacks will include Celentano's house-made sourdough with Le Ferre extra virgin olive oil and chicken liver mousse, house-cured pork and fennel salami with pickles, and smoked cod doughnuts.
Fresh pasta dishes of agnolotti with ricotta, cime di rapa, artichoke and pomelo, and parpadelle with beef ragù will sit alongside smaller dishes of Free Company's turnip with muscat grapes, pine nuts and garden herbs, and larger dishes of whole fish served on the bone. Desserts will include affogato with malted barley and chocolate, and an almond tart with reduced milk gelato.
At the bar, negronis will be made with a house vermouth, while small-batch biodynamic and natural wines will be served alongside local beer from B-Corp certified brewery Brewgooder. The restaurant will have a 32-cover dining room, a 50-cover private dining room and a covered 40-seat garden.
Celentano's is named after a song the couple remembered from their Italian honeymoon.
