Former Polpetto chef Florence Knight to cook at Sessions Art Club
Former Polpetto head chef Florence Knight is to head up the kitchen at Sessions Art Club, an upcoming restaurant, wine bar and gallery space in London.
The project was announced in 2019 but will finally launch in an 18th century building in Clerkenwell in July.
Knight led the kitchen at Russell Norman and Richard Beatty's Polpetto from 2010-15, during which time it won a Michelin Bib Gourmand, and she has since worked as a food columnist and cookbook author.
At Sessions Art Club her menu will be inspired by British, French and Italian cooking with dishes set to include grilled friggitelli with sea salt, sea bream, fig leaf; sorrel, potato and chard croquettes with lemon aioli; and pork belly cooked with fennel and orange.
Stocks, sauces, and condiments will be made in-house along with pickles, preserves and soups to ensure nothing goes to waste.
The dining room will seat 60 covers with huge arched windows looking out onto a rooftop. An additional 20 seats will be on the roof terrace, leading to a marble bar and infinity pool.
Sessions Art Club has been created by painter Jonny Gent, restaurateur and co-founder of St John Jon Spiteri and architect Russell Potter.
