Chef Harriet Mansell to open Robin Wylde as permanent restaurant

Harriet Mansell will be launching her Robin Wylde pop-up as a permanent restaurant in Lyme Regis this October.

The chef, who competed in BBC Two's Great British Menu earlier this year, will launch the restaurant offering a menu focusing on West Country produce – particularly seafood, seaweeds and sea herbs – that changes every six weeks.

After graduating from Cardiff University in politics and history, Mansell completed her Cordon Bleu culinary training and worked for Mark Hix at his Champagne and Oyster Bar within London's Selfridges.

Having cooked on board vessels in the Mediterranean, the Caribbean and the Seychelles, for clients such as the Qatari Royal Family and the Murdochs, in early 2019 she returned to the UK and ran Robin Wylde at the Pop-Up Kitchen in Lyme Regis for six months. The new site is situated within a former pottery workshop.

The 32-cover restaurant will offer a nine-course tasting menu, alongside optional pairings of low intervention and West Country wines. Dishes from the pop-up included celeriac with hazelnut, cured egg yolk and Dorset truffle; baked River Teign oyster with wild garlic and apple; and gooseberry mousse with butterscotch.

The full tasting experience will be priced at £60pp, plus £45 per person for the wine pairing.
