Celtic Collection to debut seafood restaurant concept at new Milford Haven Tŷ hotel
The Celtic Collection has announced plans to open a new seafood restaurant and bar concept called Dulse at its Tŷ Hotel Milford Waterfront in April.
The restaurant is named after the edible variety of seaweed which grows around the Pembrokeshire coast. Executive head chef and Wales National Chef of the Year 2017 Simon Crockford has overseen the design of the concept.
The menu will pay homage to Milford Haven's waterfront location, and offer fresh seafood, seasonal vegetables and dulse, with floor-to-ceiling windows overlooking Milford Marina.
Crockford said: "As a proud Pembrokeshire boy, I've always championed the great food to be found in this part of the country. Working with local producers and meeting the farmers and the fishermen who will be supplying the restaurant has been a dream come true.
"I am delighted to offer diners the chance to enjoy the freshest quality, seasonal produce from Pembrokeshire. We've created an exciting menu, inspired by the land and the coastline of West Wales, which not only complements the picturesque views of Milford Waterfront but also adds to the ambience at Dulse."
Te Tŷ Hotel Milford Waterfront, located at the entrance to Milford Waterfront, will be operated and managed by the team behind the Celtic Manor Resort when it opens in the spring.
It is part of the Celtic Collection's growing portfolio of Tŷ Hotels and will have 100 bedrooms, the new restaurant and bar, as well as a private dining area and an activity suite. Dinner, bed and breakfast will start from £171.
The Celtic Collection also includes the 330-bedroom, five-AA-starred Resort hotel; the 19th-century Manor House with 70 bedrooms; the 148-bedroom Coldra Court; the Newbridge on Usk country inn with six bedrooms; and Tŷ Hotel Magor with 129 bedrooms and 10 hunter lodges. The 170-bedroom Parkgate hotel was opened in Cardiff in autumn in partnership with the Welsh Rugby Union.
In September 2019, the Collection also opened the new International Convention Centre Wales in a joint venture partnership with the Welsh government, which can hold more than 5,000 delegates.
Milford Waterfront is a multimillion-pound regeneration project being led by the Port of Milford Haven.
