Aubergine's former maitre d' to open own restaurant

Thierry Tomasin, former maitre d' at London's Michelin-starred eatery Aubergine, is to open his own restaurant in the capital.

Angelus, which will open at the end of July, will be a 40-cover French brasserie located in Bathurst Street on the corner of Hyde Park Mews.

The restaurant will include a lounge area with bar and an al fresco space as well as a 20-cover private dining room and a chef's table.

Head chef will be Olivier Duret, who joins Tomasin from Paris where he has worked at La Cantine des Gourmets and Scribe. The menu will offer traditional French brasserie food and the restaurant will also have a focus on French wines.

Tomasin, who was previously head sommelier at Le Gavroche, said: "I am nervous but also really excited about opening Angelus. I look forward to offering my customers a relaxed environment in which to enjoy really hearty French food."
