Paul Burgalières appointed executive chef at L'Enclume
Paul Burgalières has been appointed executive chef of Simon Rogan's three-Michelin-starred L'Enclume.
Burgalières' appointment follows his six-year tenure as head chef at the Cumbrian restaurant.
Working alongside Rogan, the French-born chef led the team to win the restaurant its third Michelin star in 2022, in its twentieth year since opening.
Burgalières, who represented the UK in Le Taittinger Prix Culinaire in January this year, has taken over the position from Tom Barnes.
Barnes is due to open his debut restaurant Skof in Manchester in early 2024, which will come under Rogan's Umbel Restaurant Group umbrella.
As executive chef, Burgalières now oversees L'Enclume, Aulis Cartmel, Rogan & Co and Henrock, while Alex Rothnie will step up to the role of head chef at L'Enclume.
Kayleigh Thorogood, formerly restaurant manager of Michelin-starred Rogan & Co, has been appointed assistant operations manager of Simon Rogan's restaurants in the north-west.
Thorogood began her career in the group as demi chef de rang at L'Enclume before making her way up to junior assistant restaurant manager, and then restaurant manager.
Rogan said: "Our team in the Lakes is hugely talented and I am proud to work with such tremendous individuals. To see them grow and develop is a privilege."
