Arbutus restaurant team to launch Les Couilles du Chien bar
Anthony Demetre and Will Smith, the duo behind Michelin-starred London Soho restaurant Arbutus, are to launch a new bar named Les Couilles du Chien (French for ‘the dog's bollocks').
Set to open on 14 October at 63 Frith Street, chef-patron Demetre is to create a new menu with wine pairings from owner Smith.
Typical dishes, along similar lines to those found at Arbutus, will include warm pig's head with spiced mayonnaise alongside a glass of La Bota No 52 from Jerez, Spain; or crisp boneless ‘Label Anglais' chicken wings with Texas Ranger, a chipotle chilli porter from Copenhagen.
The new bar will serve wine by the glass and newly created cocktails including the Prune Negroni with St George terroir gin infused with prunes, vermut negro, Campari, and orange peel; and Give Peas a Chance made from fresh pea and basil, infused Reyka vodka, lillet blanc, and lemon peel.
Demetre and Smith are also the team behind the restaurant Wild Honey and French brasserie Les Deux Salons with Demetre focusing on the food and Smith on the front of house.
