April Jackson to open Wood & Water restaurant in Brixton

April Jackson is to relaunch her Three Little Birds site in London's Brixton as new restaurant Wood & Water in November.

The concept is described as serving "modern British food with Jamaican soul" and will be open for dinner, drinks, and bottomless brunch on weekends.

It will be run by Jackson, a former Miss Jamaica Universe and contestant on BBC's The Apprentice, and her partner and operations manager Lee Tan.

Jackson will oversee the menu, which has been inspired by her time growing up in Jamaica and living in France and New York. Dishes will include pan-seared duck breast with jerk glaze, roasted sweet potato puree, wilted greens, rum soaked plums, and toasted hazelnuts; potato croquettes with goat, curry, and plantain ketchup; and roasted cauliflower with beetroot hummus, pomegranate and tamarind sauce.

Tan's drinks menu will celebrate sweet and spicy flavours with cocktails such as a St Elizabeth Martini made with Porters Tropical Old Tom Gin, pineapple liqueur, acid blend and herb oil.

Jackson said: "After a hard year, it is time to go back to the reason I started six years ago, which was to share my love for Jamaica through delicious food, rum cocktails and warm hospitality.

"Brixton is still changing and we are eager to change with it. I am excited to serve small plates that have familiar ingredients alongside some less familiar Jamaican elements, in a newly renovated space, with an interesting collection of rums and an energy that keeps you wanting more."

Three Little Birds also had a site in London's Clapham, but it closed last month due to staff shortages.
