Alastair Lambert named head chef of Hispi bistro
Alastair Lambert has been appointed head chef of Elite Bistro's Hispi restaurant in Didsbury, Manchester.
Lambert started his career in Australia and worked at Chez Bruce in London's Wandsworth.
He then moved to Manchester to join Gary Usher's Elite Bistro team at Kala.
Lambert will be responsible for the group's classic menu of bistro food, adapting the lunchtime and early week offer, and creating specials.
Hispi will be hosting a five-course spring tasting menu on 26 April to celebrate Lambert's arrival, with dishes such as torched mackerel, bacon jam and pickled radish; chicken ballotine, hazelnut velouté, potato gnocchi and pickled mushroom; and white chocolate and raspberry truffle.
The restaurant opened in 2016 after a crowdfunding campaign.
