Adriana Cavita's debut London restaurant to open in May
The debut solo restaurant from Mexican chef Adriana Cavita is set to launch in London on 6 May, six months after it was originally due to open.
Cavita, on Marylebone's Wigmore Street, was originally expected to open in November but was delayed due to Brexit and Covid-related issues.
The restaurant will serve Cavita's takes on traditional Mexican dishes that tell a story of her heritage and the people who taught her how to cook. The menu will open with a rotating ‘raw' selection, depending on the seafood available, blending British seafood with Mexican flavours of chilli, lime and smoke.
Dishes will include Carlingford rock oysters with Clamato oil and jalapeño vinaigrette as well as yellow tail aguachile rojo with watermelon, mezcal and ‘grasshopper' seasoning.
Appetisers will include a Cavita Caesar salad with pink radicchio and green beans alongside the classic anchovy and Parmesan dressing.
A section of the menu will be dedicated to street food, including tacos and tlayuda, with chargrilled pumpkin, Oaxaca beans, nacha sauce, Somerset Cheddar and duck fat.
Larger sharing plates will include wood-grilled, herb-fed chicken, green mole with coal-roasted vegetables, green herbs and pumpkin seeds; Serandeado whole brill cooked over coals with morita chilli paste; and barbecued octopus with guajillo and pasilla adobo, avocado and pickled vegetables, served with tortillas.
Cavita moved to the UK in 2016 to work as head chef at Peyotito restaurants in both London and Ibiza for three years. She also hosted a residency at the rooftop of the Dorchester last June.
