Adam Stokes to open second Birmingham restaurant the Oyster Club
Chef Adam Stokes is to open a second Birmingham restaurant called the Oyster Club, specialising in "good-quality fish and seafood".
The Michelin-starred owner of Adam's restaurant, in the same city, said this new venture would specialise in oysters served from a dedicated bar. Also on the menu will be small plates such as crab on toast and moules marinière, larger plates including teriyaki salmon and fish and chips as well as meat and vegetarian options.
Stokes told The Caterer: "My first head chef position was at Glenapp Castle in Scotland and the access to phenomenal seafood was incredible up there. From running a Michelin-star restaurant we've got great links to good-quality fish here and feel that we can do this really, really well through our knowledge, experience and passion for producing some incredible dishes.
"I'd love to open a fish and chip shop and this started as that sort of idea serving really good quality fish and chips - turbot and monkfish - and then we found this site and fell in love with it. It's right underneath the Ivy on a really good quality busy street. The area is a really vibey, happening place to be and the site dictated this can't be a fish and chip shop it has to be a fish restaurant. We have to go full throttle. It will be a really nice approachable bar and restaurant offering high-end food."
The restaurant will have a 20-cover bar and 30-cover restaurant with the full menu served throughout. It is due to open in late February or early March 2019.
