Floral by Lima restaurant to relaunch as Lima Cantina
The team behind Peruvian restaurant Floral by Lima in London are to relaunch it as a new concept focused on rotisserie chicken.
Both the existing restaurant space and the Lost Alpaca bar in Covent Garden will be replaced by Lima Cantina in September.
This will see a full renovation of the kitchen and a revamp of the menu to offer a selection of sharing plates designed around showcasing a more authentic Peruvian experience.
Central to the menu will be the Pollo a La Brasa, a whole chicken cooked in a rotombo – a Peruvian charcoal rotisserie oven – that will allow smoke to directly penetrate the meat. The chicken will be marinated in a blend of Peruvian herbs and spices and accompanied by an aji amarillo (sweet yellow chilli pepper) and huacatay (black mint) sauce.
The wider menu will include sea bream ceviche; prawn causa nigiri; as well as the addition of a new charcoal grill section including aji panca (Peruvian red pepper) barbecue pork ribs.
Floral by Lima opened in 2014 and is the sister site to Lima London, which won a Michelin star in 2013 but lost the award in 2018 after it switched it's a la carte menu to sharing plates.
The Lima group was founded by Peruvian chef Virgilio Martinez and Gabriel and Joes Luis Gonzalez.
