Charlie Bonwick to take over day-to-day running of the Dew Drop Inn
Simon Bonwick has promoted his son, Charlie Bonwick, to the role of chef de cuisine at the Dew Drop Inn.
This will see Charlie take over the day-to-day running of the kitchen at the pub in Hurley, Maidenhead, while Simon will continue as chef patron.
The pair will continue to work together to evolve their classical cuisine.
The Bonwick family ran the Crown at Burchetts Green in Maidenhead for nine years, with several of Simon's nine children working in the restaurant. It won a Michelin star in 2016 and the Michelin Welcome & Service Award in 2020.
They sold the business to chef Dominic Chapman in 2022 and briefly oversaw the Princess of Shoreditch pub in London, before returning to the Maidenhead area to reopen the Dew Drop Inn in February. The pub quickly gained a recommendation in the Michelin Guide Great Britain and Ireland 2023.
Charlie has undertaken stages at Michelin-starred restaurants and worked in private service over the last eight years, while cooking under his father.
"It's a heavy responsibility taking over the day to day running of the kitchen here, what with my father's reputation and all," said Charlie.
"He's always been a nightmare to work for over the years, but "man" do you learn from him. His culinary philosophy and skill is very deep.
"I am confident with my taste, my hand, and the gesture and movement within my cooking that all will be safe and well."
Simon added: "Charlie is a confident, quiet chef. He has a lot that he wishes to do with our beautiful cuisine, I trust him completely. I will spend time cleaning the pub more and practicing our craft."
