Brawn team to reopen Sargasso in Margate next month
Ed Wilson and Josie Stead of Brawn in London's Bethnal Green are partnering with musician and owner of Sargasso restaurant in Margate, Kent, to reopen the venue next month.
The 30-cover Sargasso restaurant and bar will have high window tables looking back on Margate's Old Town and bar seating. When it reopens, it will have an additional 40 covers outside for walk-ins.
Dishes will use locally sourced, seasonal ingredients and be inspired by Europe's coastal cooking, with a menu focused on seafood and vegetables, both preserved and fresh. There will be a 40- to 50-bottle wine list that changes seasonally, as well as a selection of vermouth and draught beer.
The team will be headed by head chef Marcelo Rodrigues and manager Zac Gates, both of whom previously worked at Brawn, and manager Carmen Mac, who previously worked at Trullo and Peg in London.
The restaurant is being fitted out by joiner Herb Palmer Furniture Design using galvanised steel, wood and cork tops. The venue will also house a regular music and guest broadcasting events.
