Bar Douro to launch Portuguese sandwich street food concept
Portuguese restaurant group Bar Douro is launching sandwich and street food pop-up Roulote, named after the food trailers on the street corners of Lisbon and Porto.
It will preview as a pop-up within the Bar Douro restaurant in London Bridge on Fridays and Saturdays from 13 March until 10 April, ahead of launching as a street food van on Flat Iron Square in the summer.
Roulote will serve two sandwiches for takeaway only: an octopus roll with red peppers and caramelised onions, topped with coriander, straw potato crisps and piri-piri mayonnaise, reminiscent of the Portuguese late-night street food favourite, the cachorros; and the Bifana, made with thinly sliced pork shoulder poached in a white wine and fermented pepper sauce and served in carcaças bread with Savora mustard mayonnaise.
The concept was inspired by Bar Douro founder Max Graham's love of Portuguese street food, having grown up in Porto.
