Andy Collop joins Macleod's restaurant at the Coniston hotel as head chef

The 71-bedroom Coniston Hotel and Country Estate & Spa in Skipton, North Yorkshire, has appointed Andy Collop as head chef of its two-AA-rosette restaurant Macleod's.

Collop joined the four-AA-star hotel from Grassington House hotel, near Skipton, North Yorkshire, where he was promoted from sous to head chef during his four years at the property. He will work under the estate's executive head chef Simon Bolsover.

Collop said it was "a fantastic time" to join Macleod's after it was awarded two AA rosettes in November 2018.

"I'm looking forward to building upon the restaurant's reputation, creating new menus that showcase the fantastic local produce that we have on our doorstep in the Yorkshire Dales. working towards further accolades in the future," he explained.

Louise Bolton, director of the Coniston, added: "As our food offering goes from strength to strength across the hotel, we're delighted to welcome Andy to our dedicated team and we're really excited to see what he can bring to Macleod's. Andy's style of modern British cuisine perfectly complements the dining experience in Macleod's and we feel his creativity will help to continually improve our offering."

The Coniston has been owned by the Bannister family since 1969 and today employs more than 200 staff.
