Andrew Sheridan leaves Stargazy Inn for Birmingham's Craft Dining Rooms
Chef Andrew Sheridan has left the Stargazy Inn for Craft Dining Rooms and the soon to open Craft English Garden extension in Birmingham.
Sheridan joined Cornish restaurant the Stargazy Inn and relaunched it in April after Sosban in Llanelli, where he was previously executive chef, unexpectedly closed in February.
He will now join Craft Dining Rooms at the city's International Convention Centre and the Craft English Garden as executive chef. Craft English Garden is expected opening in January 2020 in partnership with chef Aktar Islam. There is also a revamp of the Craft dining space planned.
Sheridan's British menu will include confit salmon, cucumber and butter sauce; and glazed pig, apple and squash, while main courses will feature dishes such as venison, beetroot and mushroom; and Plymouth cod, clam and mussel chowder, with a vegetarian option of wild mushroom tart, truffle and onion. Desserts will include carrot cake trifle and Craft surprise souffle and the restaurant will continue to offer Sunday roasts.
Sheridan said: "Having met Sam, Emma and Aktar, I could see the passion they all had for traditional British dining, I believe together we can create and dining envision which creates a journey from the 1940s to 2020s, we want to ensure that the menu invokes childhood memories and excitement and whilst the offering will be considered high quality this doesn't mean it's not accessible, relaxed and open to all."
