Allister Barsby and Alice Bussi to open Hide and Fox next month

Allister Barsby and Alice Bussi are set to open their first restaurant, Hide and Fox, on 7 June.

The restaurant near Hythe in Kent will serve modern British cuisine in an "intimate and relaxed" environment, with a focus on seasonal ingredients and fine wines.

Acorn Award-winner Barsby said: "This is a realisation of a dream for me, moving back to my home county to open our first solo venture. Kent has some of the finest produce in the UK and I can't wait to get them on the menu and to seek out more of what Kent has to offer. It's the beginning of a journey and with Alice by my side, I know it will be a special one."

Hotel Cateys Food and Beverage Manager of the Year 2018 Bussi added: "I have often visited Kent with Allister and I am now very excited to be settling in this beautiful coastal county. I have been working for incredible properties since I was 15 years old and this is the time for me to create something of my own, with the amazingly talented Allister. We are extremely excited."

The pair previously worked together for the Seren Collection in Pembrokeshire, where Barsby was executive head chef at the 26-bedroom, four-red-AA-star Grove of Narberth and retained the restaurant's three AA rosettes. He left the hotel in earlier this month and has been replaced by Douglas Balish.

Bussi was F&B manager across the collection which, as well as the Grove, includes Coast in Saundersfoot and Beach House in Swansea.
