Alex Dilling appointed executive chef of the Greenhouse
Alex Dilling has been appointed executive chef of the two Michelin-starred Greenhouse restaurant in London's Mayfair.
Dilling will begin his new role on 16 August and replaces Arnaud Bignon, who has left after six years with the restaurant and is returning to Greece.
He will introduce a new menu to the Greenhouse using British produce, described as "elegant and refined" cuisine with a modern interpretation of classic dishes.
He joins the Greenhouse from Hélène Darroze at the Connaught, where he most recently led the team as executive corporate chef, maintaining the London restaurant's two Michelin stars as well as overseeing the Paris site. Prior to this, he furthered his knowledge as a chef de cuisine at the Michelin-starred Caviar Russe in New York.
Dilling said: "Together with the talented team at the Greenhouse, I look forward to creating food that sparks joy and is truly elegant, complemented by one of the world's most outstanding wine lists."
Marlon Abela, chairman and chief executive of the Marlon Abela Restaurant Corporation which operates the Greenhouse as well as Mayfair institutions the Square, Morton's Club and Umu, said: "We are extremely excited to welcome Alex Dilling to The Greenhouse. His wealth of knowledge and expertise will bring a modern, elegant flair to London's finest dining experience and we look forward to watching him discover and create an enthralling new menu."
