Aldo Zilli to relaunch Signor Zilli as a vegetarian restaurant
Italian chef-restaurateur Aldo Zilli is to relaunch his flagship Signor Zilli restaurant in Soho as a vegetarian dining concept next month.
Zilli Green, which will open on 14 February following a redesign, will offer a menu made up entirely of meat and seafood-free dishes.
Head chef will be vegetarian chef Enzo di Marino who trained in the Abruzzo region of Italy as well as at restaurants in Japan. His menu will feature both Italian and Asian influences, with typical dishes including artichoke and smoked mozzarella risotto with toasted sunflower seeds; and marinated seared tofu with Asian salad and miso soup.
Interiors at the 70-cover Zilli Green restaurant will feature wooden floors and tabletops and lampshades in the shape of plants among a colour scheme of soft greens and browns.
Zilli said the inspiration to relaunch Signor Zilli as a vegetarian restaurant came from his appearance in reality TV show Celebrity Fit Club.
"The programme inspired me to alter the focus of my cooking with new ingredients and different patterns of eating," he said.
"This year marks my 30th anniversary as one of Soho's original restaurateurs. At the time, I brought a fresh new approach to eating Italian food to London and I want to mark this anniversary with an equally exciting new approach to a fresh and healthy way of life for everyone to enjoy."
