Albert Roux to launch two new restaurants in Scotland
Silver Catey winner Albert Roux is to open two more restaurants in Scotland.
The iconic French chef, who last year launched brasserie concept Chez Roux at luxury hotel Rocpool Reserve in Inverness, has signed deals to launch two more restaurants at Scottish hotels.
The first of the two new Chez Roux restaurants will launch at the Inver Lodge hotel above Lochinver in Sutherland, which is currently being refurbished and will reopen in April.
The second restaurant will open at the Greywalls hotel located near Edinburgh overlooking Muirfield golf course, in May.
Roux said Inver Lodge's remote location and the availability of quality Scottish produce attracted him to the project.
"Chez Roux is committed to using locally sourced Scottish produce, Inver Lodge Hotel is in a unique position as they will have daily access to some of the freshest fish and finest ingredients," he said.
"Our new menu will focus on traditional French homemade cooking using the best Scottish ingredients that we have readily available here in Lochinver."
Inver Lodge owner Robin Vestey added: "Inver Lodge Hotel's refurbishment, along with the opening of Chez Roux will put the hotel on the map as a premier hotel in North West Scotland."
Inver Lodge is managed by Inverlochy Castle Management, which also runs Rocpool Reserve, Greywalls, Inverlochy Castle and Blanefield House.
