Chef Adebola Adeshina is opening the Chubby Castor restaurant at the former site of the Fitzwilliam Arms in Castor, Cambridgeshire.

Adeshina has been head chef at the two-AA-rosette Petersham hotel restaurant in Richmond, Surrey since 2014, and was previously chef-patron of Parsons restaurant in Waltham Abbey in Essex.

He also ran the Lock restaurant in London Tottenham for five years with Fabrizio Russo, and worked at Gordon Ramsay's Aubergine. The Chubby Castor is his first solo venture and is expected to open in late November.

Presented as "civilised dining" with focus on fresh and locally-sourced produce, cooked in a modern British way, dishes will include steamed crab lasagne, and beef tartare with quail egg and walnut homemade bread.

The 60-cover restaurant will serve a la carte, set lunch and dinner menus, Sunday roast, brunch, a bar menu and afternoon teas. There will also be cooking demonstrations held with guest chefs, and three private rooms available for functions.

The Grade II-listed site is described as "relaxed" with a blend of modern and vintage design with exposed beams and Georgian-style wallpaper. The property is part of the Milton Estate, owned by the Fitzwilliam family, from which the former ‘Fitzwilliam Arms' name comes. The family have lived at nearby Milton since 1502 and the building has been a restaurant since the mid-1990s.
