Absurd Bird Southern US chicken site to open in London

Absurd Bird, a new Southern US chicken restaurant, is to launch in London's Spitalfields this February, with another site set to open in Soho shortly after.

The food is aiming to be "modern yet nostalgic, sophisticated yet humble, comfortable yet innovative". The chicken on sale will be organic, supplied by Fosse Meadows Farm, and from slow-growing breeds Cotswold White and Cotswold Gold.

Dishes at the Commercial Street site will include whole spatchcocked smoked chicken, hot smoked in house; over-night marinated, crispy, fried chicken on a waffle; jalapeno cheese biscuits; "hurricane popcorn"; corn bread pudding; sweet potato marshmallow bake, and plates unusually named "crack pie" and the adults-only "dipsy cake".

The décor will be created by LSM Design, and will be inspired by the American Deep South. The site will also include a "wing shack", an almost-underground bar, and a drinks menu inspired by soul food and drink, named Soul Shakers.
