Sally Abé to reopen the Pem later this month

Chef Sally Abé has announced the Pem at Conrad London St. James will reopen on 26 October following an extensive three-month refurbishment.

The Pem closed for ‘summer recess' in July for the installation of a new kitchen with upgraded equipment.

It also gave the team extra time to develop a new menu, which features produce from Lake District Farmers, the Wild Room, and Flying Fish.

New dishes include dressed Dorset crab, Violino pumpkin, vadouvan, buttermilk; hand dived Orkney XL scallops, Jerusalem artichoke, black garlic, sea herbs; and tarte fine of wood pigeon.

A set two-course lunch menu will also be available for £35, which will feature dishes such as venison tartare, preserved elderberries, truffled egg yolk, and beech mushrooms.

Commenting on the relaunch, Abé said: "After two years here, I've got a better understanding of what diners in the Westminster village want, so there's real variation on the menus and there's something for everyone. I can't wait to reopen – if you loved The Pem before, you're going to be blown away now."

The restaurant opened in July 2021 and was Abé's first major project following her departure from the head chef role at the Harwood Arms, London's only Michelin-starred pub.

Named after suffragette Emily Wilding Davison, who was nicknamed ‘Pem' by her close family, the 70-cover restaurant puts a modern twist on dishes inspired by historic British cuisine.
